VEGAN CHOCOLATE MOUSSE PIE

Surprise! A light and delicious chocolate mousse pie and it’s vegan. A friend of mine ordered a vegan pie and she told me to surprise her. I love to experiment, especially when it tastes delicious afterwards. I made a small version for myself and it’s my favourite vegan pie at the moment. You guys asked for more vegan recipes, so here you go!



Ingredients for the pie:

- 250gr of cashew nuts

- 200gr of dates (no pits)

- 150gr of coconut milk

- 10 tablespoons of cacao powder

- 6 tablespoons of maple syrup

- 2 tablespoons of coconut sugar

- 3 tablespoons of coconut oil

- Parchment/baking paper

- Baking mold

Ingredients for the topping:

- 2 tablespoons of coconut oil

- 150gr of pure chocolate

- Cacao powder

- Red berries (or other fruit that you prefer)

Recipe:

1. Place a cooking pot filled with water on a high fire.

2. Once the water is boiling, add the cashew nuts and dates to it.

3. Turn of the fire and let the cashew nuts and dates soak for at least one hour.

4. Once the cashew nuts and dates are thoroughly soaked, place them in a colander and

rinse them with cold water. Leave them in the colander until all the excess water is

removed.

5. Place the cashew nuts and dates in a blender.

6. Add the coconut milk, maple syrup, coconut sugar and cocoa power to the blender.

7. Blend everything together until you get one smooth mixture.

8. In the meanwhile, place a steel pan on a low fire and add coconut oil.

9. Once the coconut oil is melted, add it to the blender with the cashew nuts and dates

mixture.

10. Blend everything together.

11. Take the baking mold and grease it with baking spray or coconut oil.

12. Place a piece of parchment/baking paper in the baking mold.

13. Add the mixture from your blender to the baking mold.

14. Place it in the fridge for about 3 hours (or longer).

15. After 3 hours (or when serving), we will make the topping.

16. Take a steel pan and place it on a low fire.

17. Add the coconut oil and dark chocolate to the steel pan and let it melt.

18. Remove the pie from the fridge and the baking mold and place it on a serving plate.

19. Once the chocolate is melted, mix everything thoroughly together and pour the chocolate

mixture on top of the pie.

20. Sprinkle the pie with sieved cacao powder and finish of with red berries (or other fruit).

21. Place the pie back in the fridge for about 15 minutes so that the topping can get firm.
