Yay, leftovers from @zouterover, that means a basket full of fresh sea lettuce that I get to take home with me. An amazing product, so full of flavor to experiment with. It has a fresh and salty flavor, plus it contains a lot of calcium. If you can’t find it in the store, seaweed will do. I got some delicious recipes coming up for you. To start, this is one of my dishes using sea lettuce. Homemade sea lettuce mayonnaise. Delicious to combine it with potato wedges, in a wrap, as a dressing in a cold pasta salad, on a toast and so many more.

For one jar.


- 1 egg

- 100gr of fresh sea lettuce

- 2 tablespoons of light soy sauce

- 4 egg yolks

- 1 tablespoon of water

- 4dl of plant-based oil

- Pepper

- Salt


1. Place a cooking pot with water and a pinch of salt on a high fire.

2. Once the water is boiling, add the fresh sea lettuce to the water and let it

cook for 1 minute.

3. Remove the sea lettuce from the boiling water and place it in a bowl with

ice cold water.

4. Make sure to remove all the excess water from the sea lettuce by pressing

it thoroughly.

5. Place the sea lettuce in the blender, add 2 tablespoons of light soy sauce

and mix this shortly.

6. Add the egg yolks to the blender.

7. Add the egg to the blender.

8. Mix everything together on the lowest possible stand and little by little

add the plant-based oil.

9. Season with salt and pepper (optional).

10. If the sea lettuce mayonnaise is a bit too thick, add some water.
