ORANGE CARDAMOM CAKE

You can never bake enough cake. This cake is extremely simple (seriously) and I dare to bet that it will be easy for you to make. Sunny greetings, Cece.




Ingredients:

- 3 oranges

- 25gr self-rising flour

- ½ teaspoon of cardamom powder

- ½ teaspoon of cinnamon powder

- 3 table spoons of powder sugar

- 190gr of butter

- 200gr of sugar

- 125ml of cream

- 2 bags of vanilla sugar

- 2 eggs

- Pinch of salt

- Juice from ½ lime

- 250gr of mascarpone

- Baking spray


Recipe:

1. Preheat your oven on 180°C.

2. Make sure your butter is on room temperature.

3. (Important) notice: keep a little bit of the lemon and orange peels aside for the last step.

4. Take a mixing bowl and mix the butter together with the cream until you get a light crème.

5. Add, one by one, the eggs to this crème. Mix until you get an even mixture.

6. Wash the oranges thoroughly and remove the excess water in the peel with a dry cloth.

7. Grate the peel from the oranges into the mixing bowl and add the sieved flour to it.

8. Juice the oranges and add it to the mixing bowl together with the cinnamon and cardamom powder and the pinch of salt.

9. Mix this all together until you get an even mixture.

10. Take your baking mold and grease it with baking spray.

11. Pour the mixture in your greased baking mold.

12. Place your baking mold in the oven and bake it for about 40 minutes.

13. To make sure that the cake is baked thoroughly, I like to do a little test with a large toothpick.

14. Take the cake out of the oven.

15. Remove the cake from the baking mold and place it aside on a grate.

16. While the cake is cooling down we will make the topping.

17. Take a mixing bowl and add the cream and the powder sugar. Mix this together until you get whipped cream.

18. Add the mascarpone and lemon juice. Mix this together until you get one mass. Important note: make sure you don’t mix for too long because you want a stiff mass.

19. Place the mixture in the fridge.

20. After the cake is fully cooled down you add the mascarpone crème on top of the cake and grate a little bit of the peel from the orange and lemon on top.
