LEMON PIE

Happy Easter my little bunnies šŸ° Pie is always a good idea and especially on Easter. Light and smooth pie, lovely to eat with this sunny weather. Get the recipe on the blog for your last minute Easter bakings. Lots of Easter hugs Cece




Ingredients:

- 1 piece of puff pastry

- 3 lemons

- 4 eggs

- 160gr of sugar

- 200gr of cream

- 200gr of dried chickpeas

- Parchment paper / baking paper

Recipe:

1. Preheat your oven on 180Ā°C.

2. Place the parchment / baking paper in your baking mold (divide evenly).

3. Place the puff pastry in your baking mold (divide evenly).

4. Place another piece of parchment / baking paper on top of your puff pastry and place the dried chickpeas on top. They will prevent your puff pastry to rise.

5. Place the baking mold in the oven and bake for about 10 minutes.

6. After 10 minutes, remove the chickpeas and let the puff pastry bake for another 5 minutes.

7. While baking the puff pastry we are going to make the crĆØme. Make sure you wash the lemons thoroughly (afterwards remove the excess water with a cloth).

8. Grate the peel from the lemon into a bowl and squeeze out the juice.

9. Take another bowl and add the eggs with the sugar and cream. Mix this together.

10. Add the peel and juice from the lemon to the bowl with the egg mixture.

11. Mix this all together.

12. Remove the puff pastry from the oven and place the lemon crĆØme on top.

13. Bake the pie for another 30 minutes.

14. Remove the pie from the oven and let it cool down before removing it from the baking mold.
