FUDGE ME

No bake Fudge.

Peanut butter, chocolate fudge with coconut flakes and goji berries.

It’s the first time I made fudge but it won’t be the last time.

Gave my own little twist to this dish, I added some chili flakes and sea salt. So many different types of flavors and it turned out exactly how I wanted it. My friends love it and so do I. Enjoy the recipe!

Serves up to 6 people


Ingredients:

- 500gr of butter

- 450gr of peanut butter

- 2 tablespoons of powdered sugar

- 2 tablespoons of maple syrup

- 180gr of dark chocolate

- 60gr of goji berries

- 50gr of coconut flakes

- Salt

- ½ tablespoons of chili flakes

- Rectangle baking mold

- Plastic wrapping / foil


Recipe:

1. Bring about an inch of water to a simmer in your saucepan on a high fire.

2. Take a heatproof mixing bowl and add 450gr of butter and the peanut butter.

3. Place the heatproof bowl on top of the saucepan. The heat from the water in the saucepan will melt the ingredients in the heatproof bowl without burning the ingredients.

4. Once everything is melted you remove the heatproof bowl from the saucepan and you turn down the fire.

5. Mix everything together with a whisk.

6. Add the powdered sugar and the maple syrup to the mixing bowl and mix everything together with your whisk.

7. Take a baking mold and place your plastic foil on the bottom. This is to prevent your fudge from sticking to your baking mold and to remove it easier.

8. Divide your mixture in two. One half stays in your mixing bowl and the other half you pour into the baking mold (covered in plastic foil).

9. Sprinkle some chili flakes on the mixture that’s in the baking mold together with some sea salt.

10. Place the baking mold in the fridge for at least 30 minutes.

11. Place the heatproof mixing bowl and place it (again) on top of the saucepan.

12. Add the dark chocolate and the remainder of the butter to the mixing bowl.

13. Once everything is melted you remove the heatproof bowl from the saucepan and you turn down the fire.

14. Mix everything together with a whisk.

15. Once the first layer in your baking mold is stiff enough, you pour the mixture from your mixing bowl into your baking mold (on top of the other layer). Tip: don’t mix with your spatula, the peanut butter mixture is still very fragile.

16. Sprinkle the coconut flakes on top and put your baking mold in the fridge for another 4 hours.

17. (another) tip: to make it easier to cut the fudge, make the tip of your knife wet with hot water.
