FLAMBÉ ASPARAGUS WITH GREY SHRIMPS

Delicious, white asparagus with grey shrimps and a delicious cream sauce. I used my tarragon vinegar to flambé the asparagus. A nice dish to serve during the upcoming holidays.



For 1 person.

Ingredients:

- 150gr of white asparagus tips

- 100gr of peeled grey shrimps

- 20cl of full cream

- 3 tablespoons of the homemade tarragon vinegar (see recipe)

- Couple of flat parsley leaves

- Garlic powder

- Salt

- Pepper

- Butter

- Olive oil


Recipe:

1. Preheat a pan on a high fire and a little bit of olive oil.

2. Cut off the ends of the asparagus, you don’t need to peel them.

3. Bake the asparagus in the pan.

4. Turn the asparagus. After turning the asparagus, you lower the fire.

5. Add a little bit of butter to your pan and let it melt.

6. The asparagus still need to have a little bite to them so make sure you don’t cook them for too long.

7. Season with salt, pepper and garlic powder.

8. Flambé your asparagus with the homemade tarragon vinegar (see

recipe).

9. Add the cream to your asparagus.

10. Place the asparagus on a plate and add the shrimps on top.

11. Keep the sauce in your pan and let it cook for 30 seconds on a high

fire.

12. Chop the parsley finely and add it to your pan.

13. Pour the sauce over the asparagus.
