CREAMY AND SPICY BUTTERNUT SOUP.

This is one of my favourite soup recipes and it tastes so good. Keeping yourself warm during these cold days is extremely important and what's better than a hot bowl of fresh soup?


Serves up to 4 people

Ingredients:

- 1 butternut

- 2 shallots

- 2 cloves of garlic

- 1 red chili pepper

- Red curry paste

- Coconut milk

- Cilantro

- Olive oil

- 1 cube of vegetable broth


Recipe:

1. Peel the butternut, cut it in two, remove the seeds and cut it in large pieces.

2. Peel the shallots and garlic, cut them in fine small pieces.

3. Cut the chili pepper in two and remove the excess seeds. Afterwards, cut the chili very thin. Make sure to wash your hands after cutting the chili peppers.

4. Heat a little bit of olive oil in a stew pot. Add the shallots and the butternut. Afterwards add the garlic and the chili pepper.

5. Add 2 coffee spoons of the red curry paste and stir the mixture so that the flavor from the red curry paste is released.

6. Add water to the stew pot until all the ingredients are covered in water.

7. Add the cube of vegetable broth.

8. Let it simmer for 30 minutes on a high fire.

9. Mix everything together after 30 minutes and let it simmer on a lower fire.

10. Taste and add salt and pepper to your own flavor.

11. When you serve the soup, add a little bit of coconut milk and some shredded cilantro

leaves.
