Good morning! I am enjoying a piece of homemade banana bread this morning. Perfect for breakfast or as a healthy snack during your break with a cup of tea (or coffee). Crunchy on the outside and smooth on the inside. I used Szechuan pepper to make this banana bread a little bit more special. Nothing to feel guilty about when starting your day with a slice of homemade banana bread.


- 4 ripe bananas

- 2 eggs

- 250gr of flour

- 120gr of butter

- 115gr of brown sugar

- 1 teaspoon of baking powder

- ½ teaspoon of cinnamon

- ½ teaspoon of grinded Szechuan pepper

- Salt

- Baking mold

- Butter


1. Preheat the oven on 180°C.

2. Take the baking mold and grease it with butter.

3. Take a bowl and sieve the flour and baking powder into the mixing bowl.

4. Take a steel pan and place it on a low fire.

5. Add the 120gr of butter to the steel pan.

6. Once the butter is melted, add it to a mixing bowl.

7. Add the brown sugar to the mixing bowl with the melted butter.

8. Take another mixing bowl and add 3 bananas to it.

9. Crush the bananas with a fork.

10. Add the 2 eggs to the mixing bowl with the bananas and mix this together with a fork.

11. Add the mixture of the melted butter and sugar to the mixing bowl with the banana mixture.

12. Mix everything together with a spatula.

13. Afterwards, add the mixing bowl with the flour to the mixing bowl with the banana mixture.

14. Add the cinnamon and Szechuan pepper to the mixing bowl together with a pinch of salt.

15. Mix everything together with a spatula.

16. Pour the mixture into the baking mold.

17. I cut the last banana in two (lengthwise) and place it on top of the cake. I push it a little bit into the dough.

18. Add a little bit of brown sugar on top.

19. Place the banana bread dough in the oven for 45 minutes.

20. To check if the banana bread is ready, you take a wooden stick and pierce it into the banana bread. If the wooden stick is dry, the banana bread is ready. A little bit moist? Place the banana bread back in the oven for about 5 minutes.
