You only need a couple of ingredients to make this simple and delicious dish.

They never disappoint and perfect as a side dish.

Lots of love, C

- (waxy) potatoes (you can choose yourself how many you like)

- Butter

- Flat leaf parsley

- Garlic powder

- Cayenne powder

- Red bell pepper powder

- Salt

- Pepper

- Rosemary

- Tinfoil

1. Put a cooking pot with water on a high fire and a pinch of salt.

2. Preheat the oven on 180°C.

3. Once the water is boiling, add the potatoes. Cook the potatoes until done. Make sure to not overcook them because you will put them in the oven later on.

4. While cooking the potatoes, we’ll make the herb butter. Put some room temperature butter in a mixing bowl. Add the garlic, cayenne and red bell pepper powder to it. Add some salt and pepper. Mix it together with a fork.

5. Once the potatoes are thoroughly cooked you cut them in two, not the whole way (see picture). The bottom of the potato needs to stay intact.

6. Put a branch of rosemary and a some fresh herb butter inside the potato.Repeat this process for all the potatoes.

7. Take a piece of tinfoil (big enough to wrap one potato) and place the potato in the middle. Fold the tinfoil. Repeat this process for all the potatoes.

8. Place them in an oven dish and place the oven dish in the preheated oven. Let it cook for about 15 minutes.

9. Afterwards remove the tinfoil and the rosemary from the potato.

10. Serving tip: add some extra herb butter, finely chopped parsley and some sea salt.
